MealPlanFamily - Zucchini Noodles with Creamy Avocado Pesto

I finally joined the trend and got a spiralizer! We've been wanting one for a while but when I saw that the KitchenAid Model was on a great sale on Amazon, I knew I had to pull the trigger....

I knew the first recipe I wanted to try was Zucchini noodles, so we decided to go for this recipe.
Avocado, good. Basil, good. Garlic, Good....
It was a delicious dish but VERY heavy...seems crazy to say that about a bowl full of vegetables, but it was filling and heavy....perfect if you are in the mood for some hearty comfort food that is secretly ridiculously healthy.

I laid the noodles on paper towels in a 200 degree oven for about 20-30 minutes to dry them out a little bit before topping them with the sauce....
