We love this soup (the texture is really more like a soup than a chili)..
I use all boneless skinless chicken thighs and an extra can of beans.
We garnish it with tortilla chips, cheese & cilantro.
I make it pretty tame on the spice since I feed it to my 3 year old daughter, but my favorite thing to add to it is this "dry hot sauce" that my sister picked up for me in raleigh....adds a ton of spice to it.
