The sides on this dinner were just ok. The potatoes were basically boiled and then tossed in balsamic vinegar. The tomatoes were roasted with a little garlic... those were both pretty random and I doubt I would make them again. The chicken on the other hand, while also super simple, was good, easy and I could see myself making it again. It was basically brushed with dijon and then coated with a parmesan cheese/panko topping. Baked for 20 minutes it was like a tasty breaded chicken without the flour/egg/bread crumb mess. Hannah was a big fan too.
