We love Indian food. Our very favorite Indian restaurant in town is Shaan Indian (if you haven't been, go ahead and head on over there.... We always order some kind of saag dish, so I decided I wanted to play with some Indian spices at home and try a saag dish. I will not say this is as good as take out...but I will say it was really really good....and maybe even better the next day? I used all cut up chicken thighs instead of a full chicken. Spinach, garlic, onions, ginger, tomatoes and lots of spices...what could possibly be bad about this?
We served it over basmati rice and had plenty for leftovers the next day.
