MealPlanFamily - Slow Cooker Chicken Curry

Well, despite it being 90 degrees this week, it is September! Time for soups, stews and slow cookers! We love Indian food in our house....and I'm always on the hunt to find the perfect at home recipe. This one just happens to be pretty healthy too...which is a definite plus. We figured out that if you served this over cauliflower rice it would even be Whole 30 friendly.

We will definitely make this recipe again. Easy, healthy, delicious and both kids devoured it.
I left the cayenne pepper out so the kids would eat it and put the cayenne pepper on the table for Rob and I to add to our own bowls. We served it over basmati rice with a sprinkle of cilantro. I subbed chicken thighs for breasts because they taste better and are cheaper...soooo...duh.

MealPlanFamily - Slow Cooker Thai Chicken Soup

This has been a favorite of ours for a long time...one of those soups you just dump everything into and walk away.... and turns out delicious every time. I leave it as is for Hannah (the 3 year old) and add some sriracha to ours for a little heat.

MealPlanFamily - Quiche

I am a firm believer that quiche is appropriate for every meal. As long as it has some good cheese and some half and half or cream...it is going to turn out delicious no matter what you put in it. I used this basic recipe and added some onions, fontina cheese and mushrooms (I sauteed the mushrooms and onions before adding them). This recipe made enough to fill two (kroger) store bought pie crusts...which worked out fine since they come in a two pack.

They also seemed really shallow to me so I started off baking them for 20 minutes, checking it and then adding an extra 5...so mine cooked for about 25 minutes total. Make sure you bake them on a baking sheet to making getting them out easier.

MealPlanFamily - PF Chang's CopyCat Lettuce Wraps

Let me start by saying I'm not much of a regular at PF Chang's. In fact I have probably only ever eaten there 2-3 times in my life....so if you are a regular lettuce wrap eater there you can tell me how much these taste like the 'real thing' but regardless I think they are delicious!

I ground my own chicken thighs right in my food processor which I love and we serve ours over butter lettuce topped with hoisin sauce, sriracha and green onions. yum!

MealPlanFamily - Korean Beef Bowls

One of the things I'm loving the most about trying all these new recipes is experimenting with flavors, oils, spices, etc that I don't usually use. I have discovered that I am quasi-obsessed with sesame oil recently... I'm not sure how "authentic" this recipe is, but it was fun and different to try something new. The Kroger online ordering didn't have the Gochujang sauce which is apparently a big part of this dish...so we added a little sriracha instead and it tasted great. Next time I will seek out the magical sauce though. Enjoy!

MealPlanFamily - Greek Yogurt Cake

We had some leftover greek yogurt from our Shawarma night, and some fruit in our fridge that needed to be eaten, so we decided to try this Greek Yogurt Cake from What's Up Moms.

It turned out pretty and really delicious. My favorite part was that it wasn't super sweet. We used a springform pan to really highlight the brown edges all around and Hannah had a great time adding the fruit to the top. We used a peach and strawberries but anything would be good on this versatile cake! Enjoy!

MealPlanFamily - Slow Cooker Chicken Taco Chili

I've been on a real skinnytaste kick lately I think.... hers is one of my go-to blogs when I'm tryin to fill my meal plan with things I haven't made before....I always know whatever she makes is going to be delicious.

Hannah and Rob have been going to swim lessons twice a week at night, so on those nights I try to have dinner on the table a little earlier....and preferably something with very little cleanup so I don't get stuck cleaning the kitchen for an hour after they leave...This crock pot meal was just that....
Easy and delicious with enough leftovers for the next days lunch. Pretty much perfect :)

MealPlanFamily - Shawarma Spiced Grilled Chicken

We've had this recipe on the menu two weeks in a row which means you know it's a winner. Shawarma spiced grilled chicken that cooks up quick and easy on the grill with garlic yogurt sauce. I served it in pitas with sliced cucumbers.... absolutely delicious! The recipe says you can marinate the chicken from 1 hour to overnight....but do yourself a favor and do it overnight! This time around we doubled it so we would have extra for lunch....the chicken is great on a salad too!

MealPlanFamily - Homemade Strawberry Ice Cream

We took a 30 minute drive out to the country on Monday to go strawberry picking with some friends! It was muddy and the kids were over it after about 10 minutes but man were those strawberries good!

Anyway, We've been snacking on them all week and decided tonight to make some homemade strawberry ice cream. I love this recipe because it's literally just four ingredients: Heavy cream, milk, strawberries and a little maple syrup.... we sprinkled a little shaved dark chocolate on the top of ours because....well because dark chocolate shavings....but its delicious....and I have to say strawberries you pick yourself just taste better!

MealPlanFamily - Spiralized Mexican and Sweet Potato Casserole

In my attempt to #spiralizeallthethings we tried another spiralized recipe this week.
I don't mind recipes that take a little extra effort, even on weekdays, but this one got like 10 things dirty and the end result was super soupy.... I assume from all the water coming out of the sweet potatoes.... we used a slotted spoon to dish it out for dinner and then drained all the water out before saving the leftovers...  The flavors were great...but because of the soupiness (is that a word?) combined with the amount of effort I'm not sure I would make this particular recipe again....

...but stay tuned as no vegetable is safe in my house from my new toy :)

MealPlanFamily - Zucchini Noodles with Creamy Avocado Pesto

I finally joined the trend and got a spiralizer! We've been wanting one for a while but when I saw that the KitchenAid Model was on a great sale on Amazon, I knew I had to pull the trigger....

I knew the first recipe I wanted to try was Zucchini noodles, so we decided to go for this recipe.
Avocado, good. Basil, good. Garlic, Good....
It was a delicious dish but VERY heavy...seems crazy to say that about a bowl full of vegetables, but it was filling and heavy....perfect if you are in the mood for some hearty comfort food that is secretly ridiculously healthy.

I laid the noodles on paper towels in a 200 degree oven for about 20-30 minutes to dry them out a little bit before topping them with the sauce....

MealPlanFamily - Slow Cooker White Chicken Chili

We love this soup (the texture is really more like a soup than a chili)..
I use all boneless skinless chicken thighs and an extra can of beans.
We garnish it with tortilla chips, cheese & cilantro.
I make it pretty tame on the spice since I feed it to my 3 year old daughter, but my favorite thing to add to it is this "dry hot sauce" that my sister picked up for me in raleigh....adds a ton of spice to it.

MealPlanFamily - Herby asparagus and tomato bake with Israeli couscous, thyme and feta

This meal was good! Definitely made me realize I need more feta cheese in my life.
The charred asparagus, crunchy almonds....there was tons of different textures going on.
I would make this one again.

MealPlanFamily - Parmesan-crusted chicken with balsamic potato salad and garlic roasted tomatoes

The sides on this dinner were just ok. The potatoes were basically boiled and then tossed in balsamic vinegar. The tomatoes were roasted with a little garlic... those were both pretty random and I doubt I would make them again. The chicken on the other hand, while also super simple, was good, easy and I could see myself making it again. It was basically brushed with dijon and then coated with a parmesan cheese/panko topping. Baked for 20 minutes it was like a tasty breaded chicken without the flour/egg/bread crumb mess. Hannah was a big fan too.

MealPlanFamily - Creamy poblano bolognese with parmesan, thyme and linguine

This was another Hello Fresh meal that I got to try for free. They send all the ingredients in a box for you to whip up delicious dinners at home.

This was actually really good. I'm a little confused about the addition of the poblano peppers as I didn't really think it added much to the bolognese, but I would definitely make this again. It would be easy to recreate at home, got minimal pots dirty and came together very quickly.

MealPlanFamily - Seared cod with Mediterranean bean & tomato salad

A girl from one of the facebook groups I'm in had some free Hello Fresh Meals to send as a sample (she is a customer so had a few samples she could send to friends who are not customers) and Hello Fresh sent us 3 meals to try. I have tried Blue Apron in the past so I was excited to try these too.

For those who don't have any idea what I'm talking about...these are like, subscription meal services. They send you a big refrigerator box filled with the exact amounts of food you need and recipe cards to cook 3-4 meals. Most allow you to choose your dietary restrictions, vegetarian, gluten free, you don't like fish, whatever.... So basically you are still cooking the meals, but not having to find the recipes or shop for the ingredients. They are a fun way to try some new things.

Our first meal was this seared cod with Mediterranean bean and tomato salad.
It was fast and easy to put together. The bean salad was basically a quick pickle of the red onions and beans. It was a really simple but solid meal.

MealPlanFamily - Ina's Roast Chicken with Rutabaga

I mean....if you're going to make a roast chicken, you make Ina's roast chicken.
The first time I made this recipe I followed it exactly, using the fennel, but the next time the rutabagas were calling my name and it was delicious. The key is to let the chicken rest the full 20 minutes and while that's happening, put the pan of rutabagas back in the oven to finish roasting. The chicken drippings, butter, etc all make the rutabagas (or probably any root vegetable of your choosing) out of this world. We also never, ever make a roast chicken without making overnight slow cooker chicken stock afterwards with the bones......highly recommend.

Meal Plan Family - Fajita Bake

Oh, this is one of my favorites. It can be made ahead....like literally, make it the night before, throw it in the fridge and throw it in the oven the next day when you get home.....it's easy, it's full of flavor and it's super versatile. We have eaten it as tacos, on rice, on salads, etc. Seriously, make this.

MealPlanFamily - Chicken Saag

We love Indian food. Our very favorite Indian restaurant in town is Shaan Indian (if you haven't been, go ahead and head on over there.... We always order some kind of saag dish, so I decided I wanted to play with some Indian spices at home and try a saag dish. I will not say this is as good as take out...but I will say it was really really good....and maybe even better the next day? I used all cut up chicken thighs instead of a full chicken. Spinach, garlic, onions, ginger, tomatoes and lots of spices...what could possibly be bad about this?

We served it over basmati rice and had plenty for leftovers the next day.

MealPlanFamily - Tacos

No recipe to really post for this. I mix about half a pound ground beef with a can of black beans, letting the black beans "cook" in the fat from the meat and make my own taco seasoning (I'm not a big fan of some of the ingredients in the store bought ones) - the taco seasoning we are currently using can be found here (except I leave out the sugar). I make a big batch in a small glass jar to keep in my spice cabinet.

We top it with sour cream, tomatoes, avocado, red onions, hot sauce and sharp cheddar.
I prefer crunchy while everyone else in my house likes them soft. :)

MealPlanFamily - Orecchiette Pasta with Chicken Sausage & Broccoli

This is a staple in our house because it's easy and delicious. I can never really find the chicken sausage in Kroger, so I usually get turkey sausage in casings remove the casings. This week I decided to just get a pack of regular mild pork sausage and it was really really good.. so I might stick with that from now on.
