Recipe - Blender Pancakes

My daughter LOVES pancakes. LOVES pancakes. Loves them.
The problem? I don't really love them both from a taste standpoint and a nutritional standpoint. I don't like the idea of my day starting with a meal of basically white flour and sugar.
I tried to make whole wheat pancakes and they were too heavy and dry. I tried a couple variations of Bob's Red Mill Pancake mixes and they worked for a while until I discovered this method....and we haven't looked back since.

These pancakes are made totally in the blender....hence why I'm calling them blender pancakes.


Here are the ingredients:


Notice what's missing? No sugar! No flour! No oil!
Also, pretend those are not quick oats...stupid kroger and their identical packaging.... I usually just get the regular old fashioned oats....but either one will work!

Anyway, next we dump all the ingredients (except the egg) into our blender with the help of our lovely assistant...(ps she is on her learning tower to help me which is on the top of the list of favorite things we own and things we use every day) 


So then we're ready to blend!


I blend it all up, then add the egg and blend it for a few seconds more....

THEN...it pours right out of the blender and into the buttered skillet!



FLIP!


These pancakes are fluffy and delicious. They are also actually filling as opposed to regular pancakes since we're using oats instead of flour. I would say they have a banana hint to them but do not taste like bananas.


I feel good about feeding them to myself and my daughter for breakfast which is good since she can put away like 8 of these for breakfast....

Recipe:
Slightly Adapted from Mountain Mama Cooks

Ingredients:
2 cups old fashioned oats
1 1/4 cup milk
1 large banana
1/2 tsp ground cinnamon
1 tbsp honey
1/4 tsp salt
1 tsp pure vanilla extract
1 1/2 tsp baking powder
1 egg
butter for cooking

1. Put all of the ingredients besides the egg in the blender and blend until smooth. Add the egg and pulse a few more times until the egg is incorporated.

2.  Pour pancake mix into hot buttered pan and flip after about 2 minutes or until bubbly on the top. cook for another 1 minute and then serve with pure maple syrup.
