FarmBox Soup

Early in the season, the farmbox has a lot of greens... swiss chard, collards, kale, lettuce, etc.... and I gotta say it gets a little hard coming up with different, creative dinners for all those leafy greens night after night....
I decided to take a break from the usual sauteeing everything together and having it in a bowl over some kind of grain:

to try and make a hearty stoup. I hate Rachael Ray's ridiculous made up words, but this one makes sense....not thick enough to be a stew but a little too hearty to just be a soup...
whatever you want to call it... it was pretty tasty...

Of course you start off as you would almost any soup by sauteeing your base... in this case it was onions, carrots and garlic:
Then I added the broth which consisted of chicken stock, water and white wine... (a little for the broth... a little for the chef!)

I headed out to my "herb garden" where I picked some fresh thyme and rosemary:

Added some potatoes and canneloni beans for some thickness along with an entire head of chopped up kale...and let it simmer away...

And after all that had a hearty and delicious soup that ate like a meal.

Fresh & Perfect for a stormy cool spring night:
